I appear to have successfully made chutney! Mary Berry’s Christmas Chutney, to be precise. Tomatoes and onions and peppers and aubergine and deliciousness. It was pretty easy, although it took ages (mostly chopping everything) and I was a bit worried that it very nearly filled my largest pan when everything was raw. But it cooked down beautifully.
I was also concerned when I tasted it (during cooking) that it was going to be too spicy, but having tasted some of it when cold it seems just right :). It made a bit less than the recipe suggested – I guess it depends on how watery your vegetables are, and what you think chutney should be (the recipe says “continue to boil for 30 minutes or so, until the mixture achieves a chunky chutney consistency and the surplus watery liquid has evaporated” so it’s very much a matter of judgement when to stop).
Overall, I’m really pleased with it 🙂 feeling quite proud to have done something I’d never done before.
